Scott Kammerer, president of SoDel Concepts, recently announced the promotion of Tori Caputo to the position of general manager of Papa Grande's Coastal Taqueria in Fenwick Island, one of 10 restaurants under the hospitality group's umbrella.
"Tori gained a lot of experience as the assistant manager of Lupo Italian Kitchen, our Italian restaurant in Rehoboth Beach," Kammerer said. "She started with us as a server, and she knows firsthand the importance of efficient, friendly service."
Caputo joins Chef Efrain Martinez and his sous chef Kristian Hernandez.
"I'm so impressed with their dedication to quality," Caputo said. "They press the corn tortillas by hand, soak dried beans before simmering them, and roast the pork for eight hours. All the details count."
The slow-roasted pork is used to make the chile relleno, which is lightly breaded, fried and served with two sauces. Other popular items include the surf-and-turf burrito with steak and crab, smoked chipotle Papa Grande's (hand-cut fries with ground beef, pico de gallo, smoked chipotles and cheese), and nine different tacos.
"Papa Grande's has a talented team," Kammerer said. "We're so excited to see them all grow professionally, which only makes our company that much stronger."
